Eggrolls Recipe

Ingredients

  • 1 lb Ground pork
  • 1 cup Chopped green onions
  • 1 cup Diced onions yellow or white
  • 1 cup Chopped cilantro
  • 1 cup Shredded carrots
  • 1/2 Shredded cabbage
  • 3/4 cup Oyster sauce
  • Salt & black pepper to taste
  • 5 Eggs
  • 2 pack Glass noodles

Instructions

PREP

  • Soak or boil glass noodles in hot water for 5-10 minutes until noodle is soft. Then, drain ,rinse, and cut noodles at least 3-4 inches long.
  • Pour the ground pork, chopped green onions, chopped cilantro, onions, shredded carrots, and cabbage, oyster sauce, salt, and pepper in a big bowl for mixing.
  • Then crack 2-3 eggs in to the mixing bowl, mix again, then set aside.

WRAPPING

  • Make sure the wraps are thawed and ready to use.
  • Peel the eggroll wrappers one by one to roll.
  • On a clean surface, lay one eggroll wrapper out like a diamond. On the corner closest to you, place 2-3 tablespoons of fillings from the mixing bow. 
  • Gently fold in the bottom corner then roll the eggroll tightly upward until you reach the middle.
  • Then fold in both side corners and continue to roll tightly.
  • Leave a small space at the top to seal the eggroll with the egg yolk.
  • Crack an egg, save the egg yolk, place the yolk in a small bowl.
  • Dip the yolk with a finger or a fork and place some yolk on the small space at the top corner to seal the eggroll shut.
  • Then, roll the egg all the way until the eggroll is completed sealed up. Continue to do all the steps again until you have the amount of eggrolls you want.
  • Set the eggroll aside for frying.

FRYING

  • Heat oil in a nonstick pot/skillet on medium high until oil is hot.
  • Add in the eggrolls that are ready for frying.
  • Cook the eggrolls for about 5-6 minutes or until it is golden brown and take them out.
  • Place the cooked eggrolls on a drying rack to cool down.
  • You are done!

Notes

You can use substitute the ground pork to ground chicken or ground turkey. Ground beef will make it too oily.
